Yogurt has been around nearly as long as history has been recorded. Yogurt is the bacterial fermentation of milk, yum! Good thing we call it yogurt because I think a lot of us might not eat it otherwise! Though many enjoy it as is, others prefer to add fruit or flavoring to it for a better taste. I am among the latter. Someone got the great idea of freezing it and treating it as ice cream, great on these coming hot days of summer. The day was created by The Country’s Best Yogurt (TCBY) in 1993 on the first Sunday in June. It is a healthier choice, though maybe not as healthy as originally thought.
How to celebrate – Have some bacterial fermented milk on a stick! Add your favorite fruit to your yogurt. Make yogurt a part of your summer.
You could have pie, or cake, or any type of dessert today but why not have a parfait? Normally made with layers of ice cream, whipped cream and fruit it really can be made with any flavoring you choose. It can also be made with yogurt. We tend to think that if it is made with yogurt it is healthier but it really isn’t. And it doesn’t have to be fruit either, it can be nuts, granola, seeds… you name it. The general idea is to layer your dessert for different tastes with every bite. This might not be exactly a historic day or even a very important day, unless you are in the dairy industry. You can be different as well, try a parfait with veggies and cheese, meat and potatoes or even bits of candy. It is your parfait, make it your way.

This is going to be a sweet day, having to stuff ourselves with layers of yogurt or ice cream, surrounded by fruit and whipped cream… but then, someones got to do it so step up and take the hit yourself! You can even add some crushed nuts or granola just to keep it healthy if you like.
You honestly don’t have to use fruit, it can be chocolate which is actually a vegetable. Or broccoli, or peas or lima beans. (I don’t suggest potatoes because it’s hard to tell them from the yogurt or ice cream) Then again, maybe fruit works better.
And then there is the exotic parfait too. You may want to make sure first that you aren’t allergic to fruit you are using. That could kind of spoil the parfait for you. You can use the recipe above using any fruit of your choice. Make sure to write it down because it’s pretty easy to forget.
Adding things like mint and cookies to the parfait does make it a little more difficult and adds to the choices you have to make but I’m pretty sure you can handle it. The parfait is refreshing, relatively light and works well as a snack or a dessert.
Besides, you show a little culture by eating a parfait… that is if you make it with yogurt, not ice cream. I suppose you could use puddling as well. In fact, if you mix anything with a putty type substance mixed in I guess it clarifies as a parfait.
